This cow’s milk and egg-free apple pie is a delicious alternative for people who have an allergy to egg and / or cow’s milk
Necessities

Ingredients
- 1 pack of self-raising flour
- 200 grams of cow’s milk-free butter (eg Wajang Light)
- 200 grams of sugar
- 2 tablespoons of water or soy milk
- lemon juice
- 5 gold rings
- 2 teaspoons of cinnamon
- 75 grams of raisins
- 2 tablespoons of apricot jam
Method
Peel, core and cut the apples into small wedges. Add 50 grams of sugar, 75 grams of raisins and 2 teaspoons of cinnamon to the apple wedges and stir well. Drizzle with lemon juice and let stand until dough is ready.
Put the self-raising flour, the remaining 150 grams of sugar, the 250 grams of butter in small cubes and the 2 tablespoons of water or soy milk in the mixing bowl and knead by hand into a cohesive dough until you form a large ball of dough. Divide the dough ball into two pieces. Use a slightly larger portion for the bottom than for the dough strips on top of the cake. A mixer with dough hooks can also be used to knead the dough. You only have to use your hands for kneading into a ball. If you think the dough is still a bit too dry, you can add a little more water or soy milk.
Roll out the largest piece of dough into a plaque of about 5 cm. more diameter than the bottom of the springform pan. Now cover the springform with the dough, press the dough against the side edges of the springform with your fingers. Then fill the springform pan to the edge of the dough with the apple filling. From the piece of dough that is left, form strips, which you then place in a diamond shape over the apple mixture. Press the dough strips to the dough in the side of the spring form.
Then bake the apple pie in an oven preheated to 180 degrees. After 60 minutes the delicious golden brown apple pie can be removed from the oven. Let the apple pie cool in the spring form. When the apple pie has cooled sufficiently, heat the two tablespoons of apricot jam in a saucepan. Brush the top of the apple pie with the apricot jelly. This is best done with a kitchen brush.
Tips
- Optionally, you can garnish the apple pie with soy whipped cream, which is available in the health food store.
