Ingredients
- 2 kilos of potatoes
- 4 moderately sized onions
- 2 red peppers
- 8 pickles
- ¼ liter of stock
- 12 tablespoons of oil
- 4 tablespoons of wine vinegar
- Salt to taste
- Pepper to taste
- Other spices to taste
Preparation
Clean the potatoes and cook them for 20 minutes in a closed pan. Check regularly whether there is still enough water in it. Make sure the stock is warm and do this according to the instructions on the pack.

Cut the potatoes, onions, gherkins and bell pepper into small pieces and mix together. Pour over the warm stock
Stir together the oil, vinegar and herbs and pour this over the potato salad. Now stir well and let it cool in a refrigerator in a covered bowl
Potato salad with sour cream and mint

- 1 kilo of potatoes
- 2.5 decilitres of sour cream
- 5 sprigs of mint
- 2 tablespoons of mayonnaise
- 1 tablespoon of parsley
- 1 onion
- 2 tablespoons of dill
- 2 tablespoons of chives
- Salt to taste
Preparation
Boil the potatoes together with the mint for about twelve minutes. Then drain the potatoes and cook them dry. Remove the sprigs of mint. Chop the onion and mix it with the sour cream, mayonnaise, parsley, chives, dill and salt. Pour this mixture over the potatoes and your potato salad with sour cream and mint is ready.
Potato salad with cucumber

- 1.5 kilos of potatoes
- 1 cucumber
- 5 tablespoons of vinegar
- 1 cup of sour cream of 125 ml
- 1 tablespoon of mustard
- 1.5 decilitres of sunflower oil
- 1 clove of garlic
- Salt to taste
Preparation
Wash the cucumber and remove the seeds. Cut the cucumber into cubes of about 1 by 1 centimeter. Sprinkle the cucumber with some salt and let it stand for about half an hour. Peel the potatoes and cut them into cubes of about 1 by 1 centimeter. Put them in a pan with 1 liter of water and add the 2 tablespoons of vinegar, the stock tablet and 1 teaspoon of salt. Wait until the potatoes are al dente and let them drain in a colander. Now pat the cucumber cubes dry. And in a bowl put the sour cream, the rest of the vinegar, the mustard, the oil, the salt and the pepper. Beat this into a sauce. Add the garlic and stir well again. Finally, add the potatoes and cucumber to the sauce. Now cover the salad and let it sit in a cool place for about 2 hours.
