This is a recipe for a deliciously sweet pie with almonds and a creamy filling. This pastry comes from Germany and is extremely popular there. Bienenstich means bee sting and according to legend this cake owes its name to the fact that the baker who first baked this cake was stung by a bee who was attracted by this deliciously sweet smelling cake.
Dough for the pie base
Ingredients
- 250 g wheat flour
- 20 g yeast
- 125 ml of water
- 1 egg
- 30 g sugar
- Pinch of salt
- 30 g butter
Preparation method
Dissolve the yeast in the (lukewarm) water. Put the salt at the bottom of a mixing bowl and sieve the flour over it. Then make a small well in the flour and add butter, sugar, water and the egg. Then add the yeast / water mixture. Knead everything into a smooth, supple and airy dough using a mixer with dough hooks. Knead the dough well by hand on a floured work surface. Let the dough stand for half an hour to rise. After rising, knead again briefly and then put it in the baking tin. Prick the dough here and there.
Topping
Ingredients
- 75 g butter
- 100 g of sugar
- 1 tsp vanilla extract
- 5 tbsp milk
- 100 g sliced almonds
Preparation method
Place the butter, sugar, vanilla extract and milk in a saucepan and bring to the boil briefly. Fold in the sliced almonds and let it cool down. Then divide the mixture over the dough. Bake everything in the oven at 180 ° C for about 25 minutes. Let the baking cool down and then cut it horizontally to form two parts.
Stuffing
Ingredients
- 500 ml of milk
- 45 g cornstarch
- 1 tbsp vanilla sugar
- 1 tbsp sugar
- 75 g butter
- 40 g icing sugar
Preparation method
Place the milk, cornstarch, vanilla sugar and sugar in a saucepan and cook over low heat for about 5 minutes. It is important that the mixture boils because otherwise it will remain too liquid and will soon run out of the baking tin. After cooking, allow the mixture to cool sufficiently. Meanwhile beat the butter with the icing sugar until fluffy and then fold it through the cooled mixture.
Now divide the filling over the cake base. Then put the other pie piece on top. Sprinkle the cake with some icing sugar for an extra festive effect.
Tip
If you like fruit in a pie, you can also smear some preserved cherries over the filling.
