Ready-made cheesecake packages can be very useful, but nothing beats an “old-fashioned” cheesecake with fresh ingredients, the way my mom makes it. Her MonChout cake with strawberries is also a winner!

About cottage cheese
Cottage cheese is a fresh cheese. It is made from fresh milk. This can be cow, goat or sheep’s milk. The milk is made extra sour with lactic acid bacteria. This causes the milk to curdle, so it becomes thicker. Heat causes the milk solids (curds) to separate from the moisture (whey) and what remains is quark. The fat content varies by type. Quark in combination with fruit is often eaten for breakfast or dessert, but it is also used to make a tasty cheesecake!
Preparation
Grease a 26 centimeter springform pan with butter.
Ingredients
- 450 grams of low-fat cottage cheese
- 250 ml of whipped cream
- 6 sheets of white gelatin
- 6 tablespoons of semi-skimmed milk
- 1 orange
- 150 grams of white caster sugar
- 1 packet of vanilla-flavored sugar
- 2 to 3 bananas
- 1 pack of lady fingers
- a few tablespoons of rum or fruit juice
Preparation
- Cover the bottom of the springform pan with lady fingers
- Sprinkle the lady fingers with the rum or fruit juice
- Let the gelatin leaves soak in water for 5 minutes
- Cut the bananas into slices and cover the lady fingers
- Mix the quark with the milk and the white caster sugar
- Beat the whipped cream
- Bring the juice of the orange to the boil in a saucepan and dissolve the gelatin well
- Stir the juice with the gelatin into the quark mixture and also add the whipped cream
- Cover the lady fingers with this mixture and smooth it out as best you can
- Garnish the cheesecake with, for example, pieces of banana and whipped cream
- Finally, put the springform pan, covered with cling film, in the refrigerator and let the cheesecake stiffen for a few hours
Variations
- For a slightly fresher version of the cheesecake, you can replace the banana with pieces of peach, fresh or canned
- Seasonal fruit can also be used on the bottom and for garnish
- When using red fruit, you can replace the white gelatin with red gelatin

MonChout tart with strawberries
About MonChou
MonChou is a fresh cream cheese and consists mainly of milk and cream. MonChou is used to flavor both hot and cold dishes. Consider, for example, salads, sauces, salad dressings, desserts and cakes.
Preparation
- Cover the bottom of a 26 centimeter springform pan with parchment paper
- Take the MonChou and butter out of the refrigerator a few hours before preparing the cake
Ingredients
For the pie crust
- 1 pack of bastogne biscuits
- 125 grams of butter
For the pie filling
- 200 grams of MonChou cheese
- 150 grams of white caster sugar
- 250 ml of whipped cream
- 1 packet of vanilla-flavored sugar
- 500 grams of fresh strawberries
Preparation
Pie crust
- Crumble the bastogne cakes
- Melt the butter in a saucepan
- Remove the saucepan from the heat and add the crumbs to the butter in the saucepan
- Stir the mixture well
- Divide the mixture over the bottom of the spring form, press well and smooth it
- Put the spring form with the mixture in the fridge for a while while you prepare the filling
Cake filling
- Cut the strawberries into slices
- Beat the MonChou and the brown sugar with the mixer until light
- Beat the whipped cream well with the vanilla sugar
- Mix the whipped cream well with the MonChou mixture
- Divide this mixture over the crumb base
- Divide the strawberry slices over the mixture
- Put the cake in the fridge for a few hours before cutting it
Variations
- The fresh strawberries can be replaced by a tin of strawberry filling
- The strawberries can also be replaced with other fruits such as cherries or bananas
- If desired, the cake can be topped with whipped cream
