The following recipes are tasty, healthy and quick pasta dishes of tortellini with Italian herbs and chicken fillet and penne with spinach and bacon. They are simple dishes, but easy to prepare for many people. Until now there is no one I know who does not like it and many ask me the recipe!
Tortellini with Italian herbs and chicken fillet
Preparation time: 25 minutes
Requirements (for 4 persons):
- 1 bag of tortellini with cheese filling (250 grams)
- 350 grams of chicken fillet
- 250 gram cup of mushrooms
- 3 cloves of garlic
- 1 zucchini
- 1 can of pineapple in pieces
- Box of bean sprouts of 125 grams
- 3 spring onions
- 1 bag (50 grams) of pine nuts
- 250 grams of crème fraîche or cooking cream
- Italian spices
- salt
- Pepper
- Oil
Cut the chicken breast in pieces and fry in a wok over medium heat in a little oil until done. Add salt, pepper, 3 cloves of crushed garlic and plenty Italian spices to. Meanwhile, boil water in a large pot and add the tortellini to this. Add a little oil to the water so that the pasta does not stick. Cook the tortellini according to the packaging.
Cut the mushrooms into quarters and the zucchini into cubes and fry briefly. Cut the spring onions into pieces and add this to the wok together with the washed bean sprouts, the drained pineapple and the pine nuts. Heat the dish on a low heat for a while and add the crème fraîche or cooking cream to the dish last. Drain the tortellini and add this to the wok as well. Stir everything together and you’re done!
Penne with spinach and bacon
Preparation time: 20 minutes
Requirements (for 4 persons):
- 1 double pack of bacon (dice or strips)
- 2 pieces of chicken fillet
- 400 grams of penne
- 2 packs of 450 grams of spinach à la boursin
- 250 gram cup of chestnut mushrooms
- salt
- Pepper
- Oil
Cut the chicken breast in pieces and fry in a frying pan or wok over medium heat in a little oil until done. Add some salt and pepper. Tip: Do not add too much salt, because the bacon is also quite salty. Meanwhile, boil water in a large pot and add the penne to this. Add a little oil to the water so that the pasta does not stick. Cook the penne according to the packaging. In a separate pan, leave the Spinach thaw slowly and become warm. Make sure it doesn’t boil. Add the bacon to the chicken fillet and let it fry briefly. Cut the chestnut mushrooms into quarters and add this to the chicken breast and bacon. Drain the penne. Now add the spinach to the wok and stir well.
Serve the penne and the stir-fry mixture separately.
It goes without saying that these recipes can be adapted or changed according to your own taste or idea. You can play with the mentioned ingredients, or add other (fresh) herbs, for example. For example, it is cheaper and just as tasty to use 1 pack of spinach à la boursin and 1 pack of spinach à la crème with the second dish.
To make the dish even healthier, you can use the wholemeal variety instead of the “regular” penne.
