Many people cannot tolerate gluten or wheat due to an allergy or intolerance. On this page you will find a recipe for delicious and easy gluten-free bread baking. A number of variations are also given, so that it certainly does not become monotonous. Gluten-free bread has never been more varied! Additionally, you will also find some explanation about lesser known ingredients.
Buckwheat bread:
Ingredients:
- 25 gr fresh yeast or 1 1/4 bag of dried yeast
- 3.5 dl lukewarm water
- 2 tbsp sugar
- 400 gr buckwheat flour
- 3 tsp salt
- Possibly 2 tsp xanthan gum
- extra buckwheat flour for the worktop
- little extra water for sprinkling
Preparation:
- Take 5 tbsp of water and dissolve the yeast and sugar in it.
- Mix the buckwheat flour and salt and possibly the xanthan gums and make a well in the center. Pour in the yeast solution and stir in some flour little by little.
- Add the rest of the water and mix well with the flour.
- Dust the work surface with extra buckwheat flour and knead the dough well for 10 minutes.
- Cover it with a damp cloth and let it rise in a warm place for half an hour.
- Knead the dough briefly and shape the bread on a greased baking tray or in a greased bread tin.
- Cover it again with the damp cloth and let rise for another 45 minutes in a warm place.
- Preheat the oven to 200 ° C / Gas mark 4 and bake the bread in the center of the oven for 50 minutes.
- Brush with water and bake for another 5 minutes.
- Let the bread cool down.
Variations:
Corn bread:
Replace 200 g buckwheat flour with 200 g corn flour or 200 g rice flour.
Herbal bread:
Add 3 tablespoons of finely chopped green herbs to the dough such as chives, parsley, chervil, …
Spice cake:
Add 1 tsp cinnamon, 1/4 tsp ground cloves, 3 tsp biscuit spices and 75 g washed and soaked raisins to the dough.
Poppy seed or sesame seed bread:
Before baking, brush the bread with water and sprinkle it with poppy and / or sesame seeds, or mix them into the dough.
Sweet milk bread:
Use milk or a milk substitute instead of water and add 3 tbsp sugar to the dough, and currants and / or raisins if desired.
Baguette:
Make 2 equal rolls of the dough and make a few diagonal notches in it, the baking time now only takes 20 to 25 minutes.
Fruit bread:
After the first rising, add pieces of fruit such as apples, plums, apricots, …
Small buns:
Divide the dough into 8 equal portions and make balls or put them in cake tins. Bake them for 20 minutes. You can combine with the above variation.
Various shapes:
Try making a different shape: a wreath, braid, figure, and so on. This ensures that children are enthusiastic about bread again and again. Baking times can then vary between 20 and 50 minutes, depending on the thickness of the mold.

Extra information about certain ingredients:
Buckwheat flour:
This is not a grain, but a type of ground seed crop. It is rich in magnesium, iron, B vitamins and dietary fiber. It is a good gluten-free substitute for wheat. It does have slightly less binding properties than wheat.
Xanthan gum
Is a gum that is widely used as a thickener in food to obtain a higher viscosity.
In addition to being used as a thickener, it is also used as a stabilizer, emulsifier and substitute for gluten. It ensures that gluten-free bread is less dry and crumbly. In Belgium you can order xanthan gum in some pharmacies. In the Netherlands it is more easily available. Follow the instructions on the packaging.
Milk substitute:
Some people are allergic to cow’s milk, which makes a milk substitute necessary. Options include: soy milk, rice milk, almond milk, and so on. Choose a milk substitute according to your own wishes. Coconut milk can also be used for a coconut bread. Then a handful of coconut powder can be added to the dough for an even more pronounced coconut flavor.
Rice flour:
This flour made from rice ensures that the bread has a lighter texture and is easy to digest. Ideal for children.
