For a healthy dinner, it is important to eat enough vegetables. You may be surprised, but eating potatoes is not bad at all when you want to lose weight. However, this is often said. Potatoes contain many different vitamins. It also contains a lot of fiber (necessary for a good bowel movement) and iron. Potatoes quickly become “bad” when you eat a lot of gravy or sauce (mayonnaise for example). Deep fried potatoes (fries / chips) are not healthy. What kind of healthy dishes are there to do with potatoes?
Roasted vegetable and potato salad
For two persons
Ingredients
- 1 red onion
- 2 potatoes
- 1 zucchini
- 1 yellow pepper
- 2 tomatoes
- 3 tbsp olive oil
- sea salt
- black pepper
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- ½ lemon
- Parmesan cheese
Preparation
Preheat the oven to 200 degrees. Cut the onion into quarters, the zucchini and bell pepper into thick slices and the tomatoes in half. Peel the potatoes and cut into pieces. Place all the vegetables with the potatoes in a deep roasting dish and drizzle with 1 tbsp olive oil. Gently shake the dish so that the vegetables are well coated with the oil. Season with some salt and pepper. Fry the vegetables for about 35 minutes until they are soft and slightly burnt on the edges. Mix 2 tbsp olive oil with the honey, balsamic vinegar and juice and zest of half a lemon. Pour this over the roasted vegetables. Mix everything well and divide it over two plates. Sprinkle some more Parmesan cheese on top.
Indian potato onion soup
For two persons
Ingredients
- 1 tbsp olive oil
- 1 onion
- piece of fresh ginger
- 1 large potato
- 1 naan bread
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- 1 tsp ground cinnamon
- 500 ml chicken stock
- salt
- black pepper
- 1 tbsp yogurt
Preparation
Chop the onion. Peel the potato and cut into 1 cm cubes. Heat the oil in a deep frying pan with a lid. Saute the onion and ginger for 5 minutes or until soft. Add the potato and cook 1 minute more. Stir frequently. Add the cumin, corander, turmeric and cinnamon with 1 tablespoon of cold water to a small bowl. Stir to make a paste. Add the pasta to the onion and potato and cook for 1 minute while stirring. Add the stock and season with salt and pepper. Bring it to a boil. Reduce the heat and let the pan simmer for 30 minutes (until the potato is soft) with the lid on the pan. Let the soup cool down for a while. Mix the soup in a blender or push the soup through a metal sieve. Return the soup to the pan and heat slowly. Garnish with the yogurt and heated naan bread. Possibly with a green salad.
Potato cakes with red onion chutney
For two persons
Ingredients
- 350 grams of potatoes
- 1 garlic clove
- half a cup of cabbage
- 2 shallots
- sea salt
- black pepper
- 1 tbsp butter
- 1 tbsp sunflower oil
- 1 large red onion or 3 small ones
- 2 tbsp brown sugar
- ½ tbsp white wine vinegar
Preparation
Peel the potatoes and cut into equal pieces. Place the potatoes and peeled garlic in a saucepan. Cover the potatoes with water and bring to a boil. Cover the pan and cook for 15-20 minutes. Drain, return to the pan and mash until smooth. Let it cool down. Meanwhile, put the cabbage in a saucepan and pour boiling water over it. Bring to a boil again and drain. Cut the shallots into thin slices. Add the cabbage and shallots to the potatoes, season with salt and pepper and mix well. Chop the red onions and place in a saucepan with the sugar and wine vinegar. Bring to a boil over low heat. Simmer uncovered for 20 minutes, until the liquid has almost evaporated. Divide the potatoes into four portions and make biscuits. Melt the butter in a frying pan, add the oil and fry the cookies on medium heat for 5 minutes on both sides. Be careful when turning, because the cookies are soft. Be careful. When they are golden brown, they are ready. Serve with the chutney.
