Low-calorie pizza
Ingredients
For the bottom
- 1 small cauliflower
- 60 grams of Parmesan cheese
- 60 grams of mozzarella
- 1 teaspoon of dried oregano
- 1 clove of garlic
- 1 egg
- salt and pepper

- tomato sauce
- 2 scoops of mozzarella
- oregano
- 1 red pepper
- Parma ham
- basil (garnish)
- you can adjust the topping to your taste by adding ingredients
Preparation
Preheat the oven to 220 degrees and place a flat baking pan in it to heat up. Finely grate the cauliflower, cover it with a plate and put it in the microwave for 4 minutes. Let it cool on a tea towel. Meanwhile, grate the cheese in a large mixing bowl. When the cauliflower has cooled, squeeze out all the moisture with the tea towel. Add the cauliflower to the cheese and add oregano, garlic and egg. Mix the ingredients together. Lay out a piece of parchment paper and spread a little bit of olive oil over it. Make the shape of your pizza base on the baking paper with the cauliflower ‘dough’. Place the baking paper on the warm baking tray and put it in the oven for 10 minutes. When the bottom is baked, add the topping. Spread the tomato sauce over the bottom and add ham and chopped red pepper. Now put the pizza in the oven for 5 minutes. Serve with basil leaves if desired.
Low-calorie garlic puree
Ingredients
- 1 cauliflower
- 1 bag of miso (Japanese soybean paste)
- 1 clove of garlic
- 50 grams of butter
- 100 ml crème fraîche
- nutmeg
- salt and pepper
- optional: sausages and onion
Preparation
Add a glass of water to a pan with the miso paste. Put the lid on the pan and let it boil. Cut the cauliflower into florets and put them in the pan with a lid. Let this boil for 10 minutes and drain. Place the cauliflower and garlic in the food processor to chop them finely. Then mix the cauliflower, garlic, butter, crème fraîche, nutmeg, salt and pepper together. Serve as a side dish or with sausages and fried onion rings.
Low-calorie ‘fried rice’
Ingredients
- 1 cauliflower
- 2 handfuls of shrimps
- 2 eggs
- 2 spring onions
- 2 cloves of garlic
- 2 or 3 chilies (red or green)
- 1 hand fresh cilantro
- 1 handful of peanuts
- soy sauce
- sweet chili sauce
- 2 tablespoons of coconut oil
- 2 tablespoons of sesame oil
Preparation
Cut the cauliflower into florets and then finely chop them with the food processor. Wring the cauliflower dry with a tea towel. Heat a wok and add the sesame oil and coconut oil. Then add the garlic and fry until brown. Then add the chopped peppers and cauliflower. Let this bake for a minute and then add the spring onion. Add 2 tablespoons of soy sauce and mix it with the ‘rice’. Then add the shrimp. Then empty the center of the pan and break an egg on top. When the egg starts to set, mix it with the cauliflower. Do this again for the other egg, then serve with a handful of fresh cilantro and peanuts. Add sweet chili sauce and soy sauce to your own taste.
