India is a big country, with many different national dishes. The most famous dish is Curry, but there are plenty of other delicious dishes to be found. Contrary to popular belief, not all dishes from Indian cuisine have a sharp taste. For example, the Samosa, an Indian patty, or Naan, an Indian bread that is often served with the Curry.
What are Samosas?
Samosa is a delicious snack from India. It is a kind of patty in the shape of a triangle, which is baked or fried. Samosas are often served at parties and on special occasions. The pasties are made from filo pastry, flour pastry or puff pastry. There is a lot of variation in filling; with vegetables, meat or just potato. Spicy to spicy and often served with a Chutney.
Recipe Samosa dough
Ingredients
- 125 grams flour
- 2 etl. (Olive oil
- 80 ml. Lukewarm water
- Pinch of salt
Preparation method
- Mix all ingredients and knead until dough is soft. If necessary, add extra water or flour.
- Let the dough rest for a while and then divide it into 6 portions.
- Roll out each piece of dough in the shape of an oval and cut each oval in half so that you get pancakes in the shape of a half oval. The dough can be fairly thin, but make sure that the dough does not contain cracks.
- Roll up the dough in such a way that you get a cone.
- Take this cone in your hand (like you hold an ice cream) and fill the cone with Samosa filling. Use for this not too much fillingbecause then the dough can tear.
- Pinch the dough so that there is no gap.
- Fry the samosas until golden brown.

What is Naan?
Naan (bread) is a flat bread that is often eaten in combination with curry, instead of rice. Naan is traditionally baked in a clay oven or tandoor, but can also be prepared in a regular oven or pan.
In the Netherlands, a Naan is often referred to as Naan bread. The translation of Naan is bread, so Naan bread means Bread bread.
Naan is eaten in several countries, but is mainly known from Indian culture. There are several variants. Plain, with herbs or with meat. After baking, a naan is often coated with Ghee, an Indian butter.
Recipe Naan Nuturel
Ingredients
- 250 grams of flour
- 1 etl. Dry yeast
- 1 etl. Sugar
- 150-175 ml. Water (lukewarm to warm)
- 2 etl. (Greek yoghurt
- 2 etl. Soft butter
- Salt to taste
Preparation method
- Place the dry yeast, sugar and lukewarm water in a bowl and stir until the yeast has dissolved.
- Let this stand for 5-10 minutes and then add the remaining ingredients.
- Knead the batter until all ingredients are well mixed and the batter is elastic (it should not crumble). Add extra water or flour if necessary.
- Let the dough rise in a bowl in a warm place for 1 to 2 hours, until it has doubled in volume. Add a few drops of oil to the bowl (so that the dough is easier to remove) and place a damp tea towel over the bowl.
- When the dough has risen enough, divide it into 4 to 6 equal pieces.
- Roll out these pieces into 1 cm thick plates. If you make the dough too thin, the naan will become hard.
- Brush the loaves with Ghee or melted butter and bake the loaves in an oven or grill pan on the highest setting. This takes 2-5 minutes.
- The loaves are ready when they are golden brown and round.
There are many variations of the basic Naan recipe. If desired, part of the water can be replaced by (Greek) yogurt.
Recipe Naan Potato Filling
Ingredients
- Basic naan recipe
- 2 potatoes
- 0.5 tl. Lemon juice
- 0.5 tl. Cumin seed
- 0.5 tl. Masala
- Salt to taste
- Green / red pepper to taste
Preparation method
- Prepare the dough as in the basic recipe.
- Boil the potatoes and let them cool.
- Mash the potatoes and add the other ingredients.
- Mix the mixture.
- Make balls of the base dough and press a ball of potato mixture in here.
- Fold the dough so that the potato is in the dough ball and carefully roll out the dough.
- Bake the naan as in the basic recipe.
