What makes Teff a primal grain?
Breeding crops such as wheat has resulted in much higher yields per hectare. With the higher yields, many good properties of crops have also been lost. Teff still has exactly the same properties as when it was eaten 4,000 years ago. This grain has not been messed with. It is pure nature as nature intended. Processing into food
Because the teff grains are so small, it is not possible to peel them before they are ground. So teff flour is always whole wheat flour, which means that it is rich in dietary fiber. Teff flour can be processed in the same way as wheat flour. Teff is the main ingredient for injera, the flat cake that is the staple food in many parts of Ethiopia and neighboring regions.
