Sushi is a delicious dish that you can adjust to your own taste. There are so many combinations possible that there is something tasty for everyone. A bamboo mat
A bamboo mat is used when rolling the sushi. The mat ensures an even pressure distribution. Preferably use a bamboo mat that is not round, but one flat. side. A bamboo mat is for sale at the Xenos or at a shop.
Nori (seaweed sheets)
Nori are sheets of pressed seaweed. These seaweed sheets keep almost all sushi rolls together. When preparing sushi it is important that you distinguish between the smooth side and a slightly rougher side of the seaweed leaves. Place the smooth side on the bamboo mat, so that the rough side is visible.

Sushi rice
You can’t just use any type of rice to make sushi. It is important that the rice is naturally sticky. Use specialty sushi rice or any other type of long grain rice. 185 grams of rice are required for 3 rolls of sushi.
Preparing the rice
- Rinse the rice under running water for 1 to 2 minutes.
- Put the water in a saucepan. Add water until the rice is just submerged.
- Bring the rice to a boil over high heat. Stir every 1 to 2 minutes.
- When the water boils, cover the pan and reduce the heat to a minimum. Now stop stirring.
- After 6 to 8 minutes, check if the water has already been absorbed by the rice. If so, the rice is ready. If not, check every minute if the water has already been absorbed.
- Only remove the rice from the pan with a wooden spoon. A metal spoon would damage the rice.
- Do not use the rice that is stuck to the bottom.
- In a bowl, mix 1 cup of rice vinegar, 2 tablespoons of sugar and 2 teaspoons of salt.
- Add this to the rice and stir well (with a wooden spoon).
- Let the rice cool to room temperature.
Stuffing
Ultimately, of course, it is the filling that makes the sushi so delicious. In general, the filling of sushi consists of raw fish. For health reasons, always ask the fishmonger if the fish in question is safe to eat raw. Pregnant women are also advised not to eat raw fish.
