Masala chicken (chicken curry) is a popular dish from the Surinamese kitchen. Below you will find an authentic recipe for the enthusiast.
Ingredients
- 1 kg chicken fillet, cut into cubes or strips
- ½ onion, chopped
- 2 tablespoons masala (curry)
- vegetable oil (for example: olive, sunflower or rice oil)
- ½ ground or mashed fresh pepper (not necessary if you don’t like hot food)
- salt
- 2 cloves of fresh garlic (pressed)
- 1 medium waxy potato, peeled and cut into wedges
- 1 branch of fresh celery
- 1 fresh tomato, pitted and cut into small cubes
Preparation
- Heat a wok and add two to three tablespoons of oil
- Fry the chopped onion in the oil until translucent
- Add the garlic and pepper and fry it for a while (about 10 seconds)
- Add 2 heaped tablespoons of masala and stir it through the oil (about 10 seconds). Note: if the mix of masala and oil cannot be stirred, add some more oil.
- Add the tomato pieces to the pan with the masala. Let it bake for about half a minute
- Add the chicken breast and let it bake. Turn this over a few times until the moisture has burned away from the chicken
- Add the potato wedges
- Immediately add a full glass of water (the amount of water depends on the amount of gravy you want)
- Let everything simmer under a closed lid until the potato wedges are cooked
- Add salt to taste and mix everything
- Chop the celery and sprinkle this over the chicken
- Let everything simmer for a while (if too much water has boiled away, feel free to add a splash of water, so you have more gravy)
Tip
If you like a lot of gravy it can get watery. Use the spoon to crush a potato wedge to thicken the gravy.

Masala Chicken is even better the next day, because the herbs are better absorbed into the meat. So, prepare this a day in advance, or make enough so that you can eat it again the next day! Do keep it in the refrigerator.
