One of the most delicious recipes in African cuisine is that of the African milk cake, also known as Melktert. This delicious soft cake is best when served warm and eaten. By eating the cake in this way, you no longer taste the milk, but it tastes deliciously sweet and as if the cake is melting off your fork. The cake is delicious to eat with coffee or after dinner. Please note that the cake can be quite filling and that it is not advisable to consume it if you are already full.

To make the pie crust:
- 250 ml (about 1 cup) of flour
- 12.5 ml icing sugar
- 125 gr butter
- little salt
For the filling:
- 500ml of milk
- 1 piece of cinnamon pipe or grated zest of 1 orange
- 37ml flour
- 62ml sugar
- 12.5 ml corn flour
- 3 eggs
- 1ml (1/4 tsp) salt
- 25 ml (2 tbsp) butter
For the garnish:
Mix flour and sugar. Grate the cold butter and knead until crumbly. Then press the mixture onto the greased edges and the bottom of the baking pan.
Making the filling:
Boil the milk with the cinnamon pipe in it. Mix the sugar, flour, cornmeal and salt. Add warm milk to the dry ingredients a little at a time and keep stirring with a spoon. Then let the mixture boil slowly and stir for about 5 minutes until the mixture is thick and cooked through. Then remove the pan from the stove and add butter. Then let it cool down for a while.
Then beat the eggs and add them to the warm mixture while stirring. Make sure that the mixture is smooth, as lumps can cause the cake to fail. Then spoon the mixture into the cake pan.
Bake everything in the preheated oven at 220 ° C (425 ° F) for about 20 minutes and reduce the heat after the first 10 minutes.
Let the cake cool for a while and sprinkle the cinnamon sugar on top as a garnish.
Preferably serve the cake warm.
