With the cold weather, there is nothing better than sitting in front of the fireplace with a warm bowl of soup. The classic onion soup is one of the favorite winter soups. A variation on this is the port onion soup. Here the recipe for a delicious warming soup.
Aromas and spirits
The port onion soup is delicious because of the combination of aromas with a hint of spirits. Preferably use fresh herbs to make the soup stand out. And, the longer the soup is, the better it will be. So feel free to make the soup a day in advance, the flavors can then absorb well. After that, enjoy!
The ingredients for port onion soup (serves 6)
- 2 tablets of vegetable stock
- liquid butter
- 6 large red onions
- 150 grams of sliced bacon
- 0.3 liters of port
- 100 grams of old cheese
- 4 bay leaves
- thyme and rosemary (sprigs)
- 6 tbsp balsamic vinegar
- pepper
- 4 tsp salt
- tsp sugar
- kitchen twine
- baguette
Preparation of port onion soup
Bring 1.5 liters of water to the boil. Add the vegetable stock tablets when the water is boiling. Let it burn gently on a fire. Meanwhile cut the onions into rings. Fry them lightly brown in liquid butter for 20 minutes on low heat. Wrap wide strips of sliced bacon at the end. Sprinkle 4 teaspoons of salt over it. Then add the stock. Tie the thyme and rosemary sprigs into a bunch with the help of a kitchen twine. Add this to the soup (remove the bunch before serving). Add the bay leaves to the soup as well, remove them before serving. Add the port, sugar and balsamic vinegar. Let it simmer for 4 hours. Stir half of the old cheese into the soup an hour in advance so that the flavors can still absorb. Use the rest of the old cheese to gratin French bread.
Gratinating baguettes
Bake a baguette in a preheated oven at 180 degrees until done. Let the baguette cool and cut it into slices. Take 6 slices separately. Sprinkle these with old cheese and grill them in the oven until they are light golden brown. Then place the pieces of baguette with au gratin cheese on the port onion soup.
Serve onion soup with baguette and cheeses
Taste if the soup is flavored. The preference for the amount of salt and pepper is very person-dependent! Add salt, pepper and port if necessary. Serve the soup with the au gratin French bread on top. It is delicious to serve baguette with various types of cheese such as camembert, goat brie (surprisingly delicious) or blue cheese. Rye bread with bacon is also recommended. Some gourmets also like rye bread with cumin cheese.
