Pancakes are timeless, with a nice soft sweet filling, spicy or savory filling. Something for everyone when it comes to the famous pancake. Some options that can of course be varied.
Basic recipe
You can combine pancakes with anything, but the basic recipe is as follows if we assume about 8 pancakes.
Ingredients
- 125 grams of wheat flour
- 3 dl semi-skimmed milk
- 35 grams of margarine
- salt
- 2 eggs
- vegetable oil
Preparation
Sieve the flour well and make sure that the eggs end up in the middle of the flour (make a kind of well). Mix it well and then add a pinch of salt and half of the milk. Also mix this well and carefully add the rest of the milk. In the meantime, let the margarine melt and then add that as well.
Now the oil can be heated in the skillet and spread a thin layer of batter over the bottom of the pan. The easiest way to do this is to quickly move the pan in all directions and then let the pancake develop on medium heat. If it starts to color at the edges, the pancake can be turned over.
Additions
Sweet
Additions can already be included in the batter. If you want a pure pancake with a sweet undertone, add some sugar to the batter (depending on the taste). But the pancake that is ready can also be provided with soft sweet icing sugar. For some extra flavor, top with some strawberry and banana slices and sprinkle some icing sugar on top as well.
The sweet pancake can also be formed by pouring some honey over the pancake that just slides out of the pan and smearing it. But strawberry jam can also be delicious over the pancake. Roll up the pancake and let the jam steep in the pancake. Cut the pancake into several pieces and you have a delicious breakfast.
Pancake with cheese
The pancake can also be savory. There are different types of cheese that lend themselves to the pancake, but we don’t see the goat cheese that often.
Ingredients
- 125 grams of wheat flour
- 3 dl semi-skimmed milk
- 35 grams of margarine
- pinch of salt
- tablespoon of sugar
- 2 eggs
- vegetable oil
- 1 bunch of spring onion
- 75 grams of fresh goat cheese
Preparation
Follow the recipe as mentioned above and add a little sugar to the batter. Mix it well and put it in the skillet. But instead of baking the pancake now, the spring onions, chopped, have to be added and the goat cheese crumbled. Let it blend into the pancake mixture in the skillet and let it cook now. Turn the whole thing over when the outside darkens in color.
Spicy pancake
Ingredients
- 125 grams of wheat flour
- 3 dl semi-skimmed milk
- 30 grams of salt butter
- pinch of salt
- tablespoon of sugar
- 2 eggs
- vegetable oil
- chestnut mushrooms
- olives
- 100 grams of lean bacon
Preparation
Follow the recipe as above except for the margarine. This must be replaced by salt butter. Chop the mushrooms (nice slices) and cut the olives in half (remove the pit). In another pan fry the lean bacon a little and if the batter can go into the snack pan, the mushrooms, olives and bacon can also be added. Leave it on a low heat (lid on the pan) for a while, so that the ingredients are well absorbed in the pancake. These pancakes are often better if they are a bit thicker than the average pancake. Mighty, so don’t bake too much.
