The Sinterklaas feast is inextricably linked with pepper and spice nuts. You can sometimes even buy them in the shops in the summer. But what could be more fun than preparing the nuts with the children? There are many recipes for gingerbread cookies and spice nuts on the internet and you can of course adjust them to your own taste! You can make them with milk and eggs, but if someone is allergic or intolerant to such ingredients, fortunately they can also be made without lactose and eggs. They can also be made gluten-free.
Ingredients for the standard gingerbread recipe
A simply delicious recipe for children and people who can eat just about anything in terms of ingredients.
- 250 grams of spelled flour
- 125 grams of brown sugar
- 100 grams of butter
- 2 tsp baking powder
- 2 tsp gingerbread spices
- 1 egg yolk
- 3 tablespoons of milk
- pinch of salt
Preparation method
Preheat the oven to a temperature of 150 degrees and then stir the dry ingredients together. Melt the butter and add the egg yolks and milk and stir the mixture well. Then knead it through. Cover and place the dough in the fridge for half an hour. Roll small balls from the dough and place them on the baking paper, leaving some space between the gingerbread cookies so they can grow.
They are ready after about 30 minutes in the oven. Then let them cool down for a while.

You can also make great gingerbread cookies without egg and milk (lactose). And of course you can also replace the flour with gluten-free flour, if you are hypersensitive to celiac disease or gluten intolerant.

Gluten free
The spelled flour can be replaced with the same amount of quinoa flour, so that there is no gluten in these spice nuts. There are also various types of gluten-free (bread) mixes for sale in the shop and on the internet. Think of brands such as Dr. Schär, Cereal, ma Vie, Organ etc.
Without eggs
Eggs you can replace it with baking soda, but also with soaked linseed (soak in warm water for a short while, so that the linseed swells and forms jelly). There are a few other ingredients that can easily replace one or two eggs in a recipe. There are also ready-made products for sale in the store that can replace eggs in recipes, such as no-Egg from Orgran.
Lactose intolerance
In case there is a problem with butter, so with lactose, then the butter is easy to replace with a butter without lactose in it. Such as “Tasty on bread” from Albert Heijn based on sunflower oil. Minus L also has lactose-free butter in its range and soy butter may also be a good alternative. This way you can easily make the recipe lactose-free.
Instead of the gingerbread spices you can also make your own spice mixture from a teaspoon of clove powder, cardamom, ginger powder, coriander, nutmeg and pepper and two tablespoons of cinnamon.
Preparation
Preheat the oven to a temperature of 160 degrees and place baking paper on the baking tray. Knead the ingredients together and add water at the end so that the dough is nice and smooth. To keep
Usually the spice nuts are still slightly soft when they come out of the oven. So let them cool down first, then they will harden on their own and taste much better. Keep them in a tightly closed container or plastic bag. This way they remain hard and tasty to eat for a longer period of time.
