It’s autumn! The times of cold, wind and rain are just around the corner. High time for a delicious autumn recipe that keeps us warm on cold days: pumpkin soup.
Pumpkinsoup
A pumpkin; when one thinks of this he will probably immediately think of the big orange things with eerie shapes cut out. This is not entirely correct; a pumpkin does not only have a decorative function such as at Halloween. Pumpkin is also perfect as an ingredient for meals or in this case as a soup. Pumpkin soup is a delicious autumnal soup that serves well as a meal soup or as a side dish. The taste of pumpkin soup is very pronounced, but as a rule everyone likes it and it can be combined well with other types of vegetables.
Necessities
- 1 pumpkin (a butternut squash or some traditional orange Halloween-style pumpkin)
- 2 cloves of garlic
- 1 vegetable stock cube
- 1 chicken stock cube
- 1 liter of warm water
- Onion
- Carrot (best cut into strips or a bag of pre-cut carrots with onion)
- Pepper
- salt
- Dash of butter
- Mushrooms in slices
- Chicken strips
How should you make it?
- Cut the pumpkin into pieces and remove the pulp (peeling is also possible, but that is not possible with all types of pumpkin). Cut the pumpkin into small cubes.
- Put a dash of butter and the two cloves of garlic in the stockpot and add the cubes of pumpkin, carrot and onion. Put this on a medium heat for about 5 minutes and stir every now and then.
- Meanwhile, prepare the stock with the vegetable stock cube and the chicken stock cube in a measuring cup with a liter of water. Take warm water so that the stock cubes dissolve well. Pour the stock into the pan with the pumpkin, onion and carrot and bring to the boil.
- Let it simmer for about 20 minutes. In the meantime, cut the mushrooms briefly.
- After 20 minutes, remove small portions (!) Of soup from the pan and pour it into the blender. Turn the blender on briefly so that the soup is smooth and pour it into a bowl or other pan. Do this until you have pureed everything.
- Pour the soup back into the pan and add the mushrooms and chicken strips. Let this simmer for about 10 minutes and then your soup is ready!
- Add some salt and pepper to taste.
Tips
- Do you find the taste too strong or too pronounced? Then add a dash of whipped cream or a spoonful of crème fraîche.
- Do you have soup left? Once prepared, soup can also be stored very well in the freezer. When you do this, the soup can be kept for six months.
