For most people who don’t live in America, barbecue sauce is a sauce that is red in color and slightly sweet that you buy at the supermarket. Here in America we have a choice that is huge. Barbecue sauce comes in different flavors and colors, the properties of which are determined by the region where the sauce is made.
Kansas City Barbecue Sauce
The most famous barbecue sauce is the classic sweet Kansas City barbecue sauce. This is the sauce that you will find in every supermaket and is made on a base of tomatoes, sugar and vinegar. This is a sauce that is easy to make yourself, every American has his own recipe for a basic barbecue sauce. This recipe is simple.
Ingredients
- 200ml apple vinegar
- 200ml ketchup
- 3 tablespoons of dark brown sugar
- 1 tablespoon of mustard
- 1 tablespoon molasses (molasses is a thick sweet dark syrup, replace with more sugar or honey if necessary)
- 1 teaspoon of salt
- 1/2 teaspoon dried chilli pepper (can be replaced with a little cayenne pepper)
Preparation method
Combine all ingredients in a mixing bowl and mix well so that the sugar dissolves. Let stand a bit so that the different flavors can mix well.
With this sauce a variation of “flavored barbecue sauces” are made add some honey and you have honey barbecue sauce, a little chipotle barbecue sauce and you have spicy chipotle barbecue sauce a dash of whiskey makes a bourbon barbecue sauce and if you add hot sauce (tabasco) you get a Louisiana style Barbecue sauce.
South Carolina barbecue sauce
Another well-known sauce is the South Carolina barbecue sauce. This sauce is yellowish in color and is made on a mustard base. The reason is that in South Carolina, the typical barbecue is not beef or chicken. Here pork is grilled, usually whole pork the meat is grilled for hours until it completely falls apart and then it is mixed with this sauce.
Ingredients
- 150 ml of mustard
- 150ml red wine vinegar
- 50 grams of sugar
- 2 tablespoons of melted butter
- one and a half teaspoons of Worcestershire sauce
- one and a half teaspoons of black pepper
- 1/2 teaspoon of salt
- 1/2 teaspoon red pepper sauce (Tabasco genre)
Preparation method
