Preparation
- Melt the chocolate. You can do this in different ways. The easiest way is to put it in a microwave safe dish and put it in the microwave. Heat it for 1 minute on the hottest setting. Remove the bowl from the microwave, stir it briefly and repeat until all the chocolate has completely melted. Another way is au bain marie. Bring a pan of water to a boil on the stove. Place a bowl on top of the pan where you put the chocolate. Because the boiling water heats the bowl on the pan, the chocolate melts. Make sure that the water does not boil too hard so that it cannot boil over.
- While melting the chocolate, cut the peanuts or hazelnuts and bacon into small pieces. Break the coconut biscuits into small pieces. You mix this all together. Add as much of the peanuts or hazelnuts, bacon and coconut biscuits as you like. Make sure that everything has to be covered with chocolate.
- Cover one of the bowls with cling film. Make sure the bowl is completely covered, including the raised edges. This way, the chocolate cannot stick to the bottom, so you can easily get it out when it has hardened.
- Once the chocolate has melted, add the peanut or hazelnut, bacon and biscuit mixture to the chocolate mixture. Stir this together briefly. Not too long because then all the bacon will melt. That’s also why you should use bacon, not marshmallows, as they melt too quickly.
- Fold the edges of the cling film over so that the top is also covered. Do not push this because then you will not get it off when the chocolate has hardened.
- Put this in the fridge for at least 4 hours so that the chocolate can harden completely. Then it can be stored both in and out of the refrigerator.
Variation tips
- Replace 400 grams of milk chocolate with dark or white chocolate
- Sprinkle some coconut or almond shavings over the top for decoration while it is still soft
- Replace the peanuts or hazelnuts with cashews or almonds
- Add raisins
Other tips
Rocky Road Chocolate is great fun to make during a children’s party. Let the children cut / break the bacon, cookies and peanuts themselves. When the chocolate has melted, the children can add and stir their cut pieces themselves. You make their own bowl for each child so that they can choose how much of everything they want to add ingredients. For decoration, the children could also sprinkle speckles, hearts or other decorative candies on it. Also tum tummetjes through it is very tasty. After a few hours it has hardened and every child has its own Rocky Road Chocolate cake. They could possibly still spray whipped cream on this before eating it.
