Preparation
- Mix the basil, garlic and olive oil.
- Keep it separate.
- Cut the tuna into thin slices and arrange on the plates.
- Sprinkle some grated parmesan cheese over the fish.
- Season with salt and pepper.
- Drizzle with vinaigrette and lemon juice.
- Cut hearts from the basil leaves.
- Sprinkle these hearts on and next to the fish.

- 4 dl fish stock

Preparation
1 day in advance
- Mix the salmon with half of the fish stock.
- Dissolve the soaked gelatin in the rest of the stock.
- Bring everything together and season with salt, pepper, tomato paste and lemon juice.
- Divide the mousse over two heart-shaped molds.
- Put in the fridge overnight.
Serve
- Turn the molds over on a dessert plate.
- Decorate with alfalfa shoots.
