Salmon is fatty fish, but full of omega 3 and since fatty fish twice a week is good and salmon can be processed hot and cold, an ultimate product to use in the kitchen. Since the lazy warm summer evenings are usually not suitable for extensive standing behind the pans, a few easy to prepare meals, but with all the necessary ingredients. All recipes are based on 4 people.
Egg noodles with salmon salad
Ingredients
- 4 slices of salmon
- 450 grams of egg noodles
- 1 medium cucumber
- 1 bunch of radishes
- 2 red peppers
- 1 small red onion
- 1/2 lemon
- Olive oil
- Balsamic vinegar
- Fresh pepper
- Sea salt
- Soy sauce
Preparation
Bring a large pan of hot water to the boil and add the noodles. Blanch this for about one minute and then let it scare under cold water for a while. In the meantime, the skillet can also be put on high heat with a little bit of oil. Brush the salmon steaks with oil and add some salt and pepper to taste. Make sure that the skin is on the slices and place the slices so that the side with the skin is underneath. Fry them for more than two minutes, turn the slices carefully and fry them for another two minutes. Then put the fried slices on a plate and let them stand for a while. Make sure the skin is crispy and the salmon is not cooked through.
In the meantime, the salad can be made up by dividing the noodles over the four portions and placing sliced cucumber slices on top and dividing the radishes into wedges. Chop the small red onion and chop it over it too. Now make a dressing with a dash of Balsamic sauce, soy sauce and some lemon juice. Finally, mix in the very small and cleaned red peppers. Now put the salmon steak on the dressed ?? noodles and pour some of the dressing over it.
Salmon with potato-pea salad
Ingredients
- 400 grams of smoked salmon
- 500 grams potatoes (preferably baby potatoes)
- 300 grams of peas
- 1 cup arugula lettuce
- 3 tablespoons of mayonnaise
- 3 tablespoons of yogurt
- 1 tablespoon of olive oil
- 1/2 lemon
- Some sweet and sour pickles (small size)
- Silverskin onions
- Pepper and salt
Preparation
Boil the potatoes with a little salt for about ten minutes. Let the potatoes cool after draining. Simultaneously cook the peas for a few minutes and let them cool down after draining. Then make a creamy dressing with the yoghurt, the mayonnaise, a squeezed half a lemon, and some salt and pepper to taste. Cut the potatoes into slices and mix them together with the peas through the dressing. Mix in some chopped gherkins and some halved pearl onions.
Now divide the potato salad over the plates, put two (sturdy) packs of smoked salmon over it, pour some olive oil on top and add some pepper. Finally, add some lettuce for garnish.
Salmon snacks
Ingredients
- 8 small wheat pistols (bake-off is also possible)
- 16 thin slices of smoked salmon
- A few sprigs of chives
- Yogonaise
- Pepper and salt
- Olive oil
- 1 red onion
- 1 lime
- Cherry tomatoes
Preparation
The sandwiches should preferably be lukewarm (bake-off is fine). Cut the buns lengthwise and at the same time make a sauce (it should not be too thin) of a few tablespoons of yogonnaise, a dash of olive oil, a squeezed lime, a chopped onion and some chopped chives. Then mix it well. Finally, add salt and pepper to taste and make sure that the dressing is spreadable to spread the halved rolls with it. Now place a slice of salmon on top of each halved sandwich, drizzle with a drop of lime and a little pepper if desired.
Top it off with a few halved cherry tomatoes on top of the salmon.
