One makes a lot of work and the other does not at all and someone else does it nice and easily outside the door ?? the meals at Christmas. For most people it is at least the basis of a social gathering. Enclosed some ideas to achieve a nice total menu, but slightly different.
Meat platters
Instead of the well-known, more obvious, meat and game types, you can also make smaller meat platters. Small snacks that you can add to the meal or serve as individual snacks.
Ingredients
- lamb fillet
- fresh pepper and sea salt
- Red pepper
- soy sauce
- chives
- ground beef
- smoked bacon
- egg
- garlic (optional)
- chicken breast
- olive oil
- soy sauce
- puff pastry
Preparation
- Divide the lamb fillet into small pieces, cut to length. The pieces of herbs with fresh pepper and sea salt and fry in a frying pan with some oil mixed with soy sauce. Add a strip of paprika and leave the pieces of meat with paprika in the pan for another minute or so. Take out and tie up with a sprig of chives to keep it looking festive.
- Make nice round balls from the ground beef which is flavored with fresh pepper, sea salt and a beaten egg (for the enthusiast you can also add a clove of garlic). Then wrap a strip of lean bacon around it and fry the balls in the frying pan for about four minutes.
- Cut the chicken breast into small cubes and fry in a frying pan with some olive oil. Then add some soy sauce. When they are ready, let them drain and make the puff pastry (ready-made or homemade) into squares and place the cube of chicken fillet on top. Fold the puff pastry, press the edges firmly and bake for about four minutes at about 200 degrees.
Potato dish with fish
A small potato dish with fish can be served as a starter, but also as a snack in between.
Ingredients
- potatoes
- salmon
- tuna
- mackerel
- olive oil
- wine vinegar
- nut oil
- chervil
- black pepper
- salt
Preparation
- The potatoes can be cleaned without peeling them. Make sure they are nice and smooth and dry before you fry them in the frying pan. Then make slices of 3 to 4 millimeters and fry them stacked on top of each other in the heated oil (160 to 170 degrees). When they are done, drain well on a clean cloth or kitchen paper. Some will be curly (like chips) and some will be straight, this is okay.
- Now make a dressing of some nut oil with some wine vinegar and put the different types of fish in the frying pan with some olive oil, season with some salt and pepper. Make sure the pieces of fish are not too big when they go into the pan and stick with them.
- Finish the plate with some potato chips, a few small pieces of fish and one or a few small pieces of fried potato slices. Pour some dressing over it and add some chervil. You can lay out the pieces of fish separately with the potato chips or mix the fish on a plate.
Salmon pancake
A tasty snack is the filled pancake. Mind you, it can be mighty!
Ingredients
- flower
- milk
- egg
- salt
- smoked salmon
- cucumber
- yogurt
- halvanaise
- dill
- pepper
- olive oil
Preparation
- Make a well-to-pour batter of flour, milk, egg and some salt and let it rest for about ten minutes.
- Chop up a nice piece of salmon and fry it briefly in some olive oil. Clean the cucumber (at least remove the seed list) and cut it into small cubes. Then make a full dressing of some yogurt and half-fat, mix well and add some chopped dill, pepper and salt.
- Now heat the olive oil in the frying pan and pour in enough batter for one pancake. Let it cook until golden brown (on both sides) and place it on the plate. Add some pieces of salmon, some of the full dressing and some pieces of cucumber. Fold the pancake and serve the pancake.
