Two tasty soups with simple ingredients to prepare quickly. Both the curry soup and the peanut soup are ready within 15 minutes. You can put the curry soup on the table immediately, but the peanut soup needs to be made the day before, because it is only really tasty when it has been left overnight so that the flavors can absorb well.

Ingredients for four people
- 2 thin leeks in narrow rings
- 1 liter chicken stock (fresh or from tablet)
- 2 tablespoons sweet soy sauce
- 6 generous tablespoons peanut butter (with pieces of nut)
- Little butter or oil for frying
- 2-3 teaspoons of lemon juice
- Sambal ulek
- Pinch of salt
- Possibly. coriander for garnish
Preparation
Melt the butter in a pan and fry the leek rings in it. After four minutes, add the stock, peanut butter and soy sauce. Bring it to the boil while stirring and let it simmer for about five minutes. Season with salt, sambal and lemon juice. (Note: because the soup still has a very predominant peanut butter flavor immediately after preparation, it is easy to add too much. So be moderate and, if necessary, season the peanut soup the next day after heating it up). Let the soup cool down slowly. Stir the soup well when you heat it up the next day. Garnish with fresh cilantro.
Variations
- Fry small pieces of chicken with the leek[[
- As soon as the soup boils, add a handful of crushed Chinese noodles
- For a well-filled soup, add one or more noodles as soon as the soup boils
- Replace the leek with other vegetables, such as (a combination of) onion, garlic or bean sprouts
- Eat it prepared with noodles (and chicken) as a meal soup and serve crackers with it
Curry soup
Ingredients for four people
- 1 liter of stock
- 1 large onion, chopped
- 1 tablespoon curry powder
- 30 grams of flour
- Little butter or oil for frying
- Pepper and salt
Preparation
Melt the butter in a pan and fry the chopped onion. Mix the curry powder here. Make sure the curry does not burn! When the onions are translucent, add the stock while stirring. Mix the flour with a little water into a paste and add it to the soup. Keep stirring! Let the soup simmer for about five minutes. Season with salt and pepper.
Variations
- Puree the soup and add 2 to 3 tablespoons of cream for a creamy smooth soup
- Fry small pieces of chicken or small meatballs with the onion
- Add a handful of rice for a meal soup. Let the soup boil until the rice is cooked
- Add other vegetables, for example a chopped bell pepper, small pieces of broccoli and / or bean sprouts
