We eat lighter and often less during the warmer months. It is not without reason that the salad is extremely popular. Yet many people still like something warm. It just shouldn’t be too much, which makes it feel full. We know that feeling, for example, if you have consumed quite a few carbohydrates. A light soup that does have tasty and especially nutritious ingredients can be a godsend. Some examples.
Chicken asparagus broth
Recipe is for 4 people
Ingredients
- 2 large chicken breasts (organic chickens preferred)
- 1 kilo of green asparagus
- 1 lime
- 1 bunch of parsley
- salt
- fresh pepper
- 4 wheat rolls
- olive oil
- goat cheese
- walnuts
Preparation
Boil the chicken breasts in plenty of water with a little salt to taste and, when done, cut the chicken into small pieces. Clean and cut the asparagus into smaller pieces and add to the chicken. Scrub the lime clean and add some grated zest (very finely grated) and the squeezed lime to the moisture of the chicken and asparagus. Add some pepper to taste. Do keep an eye on the time, because the asparagus is done within about 8 minutes.
Serve this simple and nutritious soup with a wheat roll with some olive oil, goat cheese and sprinkle some crushed walnuts on top.
Tuna pepper soup
Recipe is for 4 people
Ingredients
- 250 grams of fresh tuna
- 2 red peppers
- 1 liter of herb stock
- 1 onion
- 2 cloves of garlic
- 5 tablespoons of olive oil
- 200g small floury potatoes
- 1 tablespoon Italian herbs (preferably fresh)
- fresh pepper and sea salt
- fresh basil
- wheat baguette
- pine nuts
Preparation
Put 3 tablespoons of olive oil in a high pan and fry the chopped onion a little bit transparent. Now clean the peppers and divide them into small pieces, clean the potatoes well (brush) but do not peel them. Chop up the garlic and put everything in the pan with the onion, along with the Italian herbs. Now also add the stock and let it all stand on a medium setting on the stove for about 4 minutes. Stir well and let it simmer for about 15 minutes.
The tuna should now be cut into small slices, add some olive oil and fry or grill the small pieces of meat for a few minutes (max. 2.5 minutes). Put some sea salt and fresh pepper on the tuna. In the meantime, purée the soup that is ready a little, so that it becomes a smoother mass. Place a few slices of tuna on each deep plate and then pour the soup into the plates. Top it off with some basil leaves.
Serve the soup with pieces of wheat bread with some olive oil on top and add a bowl of pine nuts.
Tomato cucumber soup
Recipe is for 4 people
Ingredients
- 1 cucumber
- 4 large tomatoes
- 1 large onion
- 4 cubes of beef stock
- olive oil
- fresh pepper and salt
- cream
- ciabatta sandwiches
- fresh green pesto
Preparation
Peel and dice the cucumber and skin and cut the tomatoes. Fry the chopped onion in a little olive oil. Add the cucumber and tomato and then add more than 1 liter of water with the stock cubes. Bring everything to the boil and let it boil for about half an hour. Check if it still needs to be mashed and finally add some salt and pepper to taste. Spoon it into nice large bowls and put a drizzle of cream in the center of the full bowls.
Serve the soup with ciabatta sandwich, serve with some olive oil and some fresh green pesto.
