Meatballs in spicy sauce
Necessities
- 500 gr. mixed chopped
- 3 tbsp breadcrumbs
- freshly ground pepper and salt
- 2 squeezed cloves of garlic
- 1 pinch of nutmeg
- 2 beaten eggs
- 50 gr. flower
- 4 tbsp olive oil
- 1 large onion (chopped)
- ½ green pepper (cut into small cubes)
- 2 tomatoes cut into cubes
- 2 tbsp sifted tomatoes
- ½ glass of red wine
- 2 dl. chicken bouillon
- 1 tbsp chopped parsley
Preparation
Mix the minced meat with the eggs, garlic, nutmeg, breadcrumbs, pepper and salt. Make small balls of this. Roll the balls in the flour. Fry the onion and bell pepper in a pan with oil until translucent and add the balls and fry well. Now add all other ingredients and let it simmer for about 20 minutes. You can sprinkle some parsley when serving.
Mushrooms stuffed with minced meat
Necessities
- 350 grams of large mushrooms
- lemon juice
- 5 tbsp butter
- 3 tbsp onion finely chopped
- 1 clove of garlic
- 150 gr mixed minced meat
- 3 tbsp breadcrumbs
- 1/2 tsp brandy
- 1 tbsp chopped parsley
- 1 tbsp pine nuts chopped
Preparation
Preheat the oven to 170 degrees. Hollow out the mushrooms and finely chop your contents. Sprinkle some lemon juice over the mushrooms. Heat 4 tbsp butter in a pan and fry the onion and garlic until translucent. Now add the minced meat and possibly some salt and pepper and fry the minced meat until done. Add the finely chopped contents of the mushrooms to the minced meat and let it rest for about 3 minutes on a low heat. Turn off the heat and add the breadcrumbs, brandy, parsley, pine nuts and some salt and pepper if desired. Put this in the mushrooms, then put a little bit of butter on top. Bake this in the oven for about 15 minutes.
Riojanase meatballs
Necessities
- 1 dl Spanish red wine
- 750 gr minced lamb
- 1 egg yolk
- 1 egg
- 3 cloves of garlic
- 3 tbsp parsley
- salt and pepper
- 2 tbsp olive oil
- 1 onion
- 1 glass of congac
- 2 dl chicken stock
- 1 dl tomato sauce
- 4 pieces of baguette
Preparation
Finely chop the garlic and parsley and cut the onion into small strips. Soak the baguette in the wine for about 30 minutes and then squeeze it well. Mix the minced lamb with the egg, yolk, garlic, parsley and baguette. Add some salt and pepper and put the mixture in the refrigerator for about 30 minutes. After resting, turn the minced meat into small balls. Heat oil in the pan and fry the balls until brown, now add the onion and fry for about 5 minutes. Pour in the cognac and flambé it. Now also pour in the stock and sauce and bring to the boil. Let this simmer for about 20 minutes.
Potato biscuit with minced meat
Necessities
- 400 gr mixed minced meat
- 150 gr potatoes (preferably waxy)
- 1 onion
- 2 cloves of garlic
- 1/2 tsp chili powder
- 1/2 tsp oregano
- pepper and salt
- parsley
- 1 egg
- 2 tbsp flour
Preparation
Chop the onion and finely chop the garlic and parsley. Coarsely grate the potatoes and mix with the minced meat the onion, garlic, chili powder, oregano, salt and pepper, parsley, egg and flour. Make small flat biscuits and fry them in plenty of oil.
Stuffed meatballs
Necessities
- 100 grams of almonds
- 1 clove of garlic
- 50 grams of grated sheep cheese
- extra virgin olive oil
- 300 grams of minced lamb
- 1 slice of white bread without crust, soaked in milk
- 6 tablespoons of chopped parsley
- salt and pepper
- 1 egg yolk
- flower
Preparation
In a food processor, make a mixture of almonds, garlic, sheep’s cheese and a little oil. You can also add some salt and pepper here. Now make a ground beef mixture from the ground beef, bread, parsley and an egg yolk. Make balls of this. Make a well in each ball and put some of the almond mixture in it and knead the balls. Roll them briefly in the flour and then fry them nicely.
