In the summer months you generally eat a little lighter than the well-known winter food. In addition, it is always nice that you eat a little lighter, because people often eat later, enjoy the sun on a late afternoon or early evening. After all, going to sleep with a full stomach is neither good nor pleasant. The well-known meal salad is ideal for quickly preparing a healthy and tasty meal. Some examples.
Salad with tuna
Ingredients
- 2 cans of water based tuna
- 400 grams of mixed salad
- 10 sherry tomatoes
- half a cucumber
- 3 hard boiled eggs
- half a green pepper
- 1 can of tomato paste
- 2 tablespoons of capers
- pepper and salt
- 15 cocktail onions
- cayenne pepper
- natural dressing (not oil based)
Preparation
Boil the eggs and prepare the salad at the same time. Grab a large container and add the salad in it. If necessary, make it smaller and add cubes of cucumber, halved sherry tomatoes, capers, cocktail onions and a crushed bell pepper. Mix it well and add the dressing to taste (it should not get too wet). Then add the drained tuna and mix the salad well.
Mash the cooled hard-boiled eggs and add the tomato puree and some salt and pepper to taste. Mix well and put a few dots of the mixture on the salad. If necessary, sprinkle some cayenne pepper over the egg cubes and serve.
Salad with shrimp and wholemeal pasta
Ingredients
- 200 grams of fresh Dutch shrimps
- 250 grams of mixed salad
- 100 grams of wholemeal pasta
- 2 tablespoons of Hüttenkäse
- handful of chopped basil
- red pepper
- 5 spring onions
- slightly spiced dressing (oil-based)
Preparation
Cook the pasta al dente and let it cool down. At the same time prepare the salad with chopped spring onions, some basil and some crushed red pepper (seeds removed earlier of course). The shrimps can now be added and also the cooled pasta. Then the dressing to taste and mix well. Finally add the Hüttenkäse and then it is ready to serve.
Potato salad with pulled pork
Ingredients
- 200 grams of pulled pork
- 250 grams of mixed salad
- 150 grams of potatoes
- 3 vine tomatoes
- 1 red onion
- 1 tablespoon of capers
- 1 tablespoon of corn
- yogurt dressing
Preparation
Fry the pulled pork (preferably) the day before and let it chopped, chopped (make sure it has been removed from the fat). The potatoes can be cooked and make sure that they do not completely disintegrate, but that you can still make wedges. The salad can now be prepared with some capers, sliced vine tomatoes, a chopped red onion and some corn. Mix in the potatoes with the yoghurt dressing and add the pulled pork last. Ready to serve.
Finally
The meal salads contain enough vitamins and the carbohydrates are sufficient. But a piece of toasted wholemeal bread can be served with it. A dry white wine with the fish or a fresh red wine with the pulled pork and the meal is finished.
