Below are three recipes that you can enjoy for lunch and / or dinner. They contain chicken, which provides the necessary protein, and are low in fat; good for the line! You just get enough nutrients and you will love it!
Chicken, avocado and corn salad
Ingredients
- half a bunch of coriander, finely chopped
- 2 tbsp. lemon juice
- pepper and salt
- olive oil to taste
- can of corn
- 1 avocado, in pieces
- 1 cucumber, in pieces
- chicken breast
- tortillas
Preparation
Mix the coriander, olive oil, lemon juice and salt and pepper in a bowl. Roast the chicken breast. Mix the avocado, cucumber and corn into the dressing. Cut the chicken breast into pieces and mix with the salad. Toast the tortillas according to the instructions on the package and serve them loose, cut into six slices.
Chicken with zucchini in balsamic vinegar
The arugula has been added to the recipe and it turned out very well, it is amazingly tasty! If you have exercised before dinner, eat a piece of feta cheese, an unexpectedly beautiful combination.
Ingredients
- 1 zucchini, thinly sliced
- chicken fillet, cut into strips
- balsamic vinegar, preferably viscous from a tube, which is a bit sweeter
- arugula
- pepper and salt
- olive oil
- possibly. a little sugar if you use regular balsamic vinegar
- possibly. feta, cubed
Preparation
Fry the zucchini in the olive oil and pour balsamic vinegar over it (and some sugar if necessary) and let the zucchini fry for a few more minutes. Fry the chicken fillet with a few large grains of salt. Put the arugula in a bowl. Place the zucchini slices on top and sprinkle with salt and pepper to taste. Place the chicken breast on top and pour some balsamic vinegar over it.
For after a lot of exercise: pasta with pointed pepper, chicken and pesto
Ingredients
- chicken fillet, cut into strips
- jar of pesto
- 1 pointed pepper, cut into thin rings
- 2 cloves of garlic
- olive oil
- pepper and salt
Preparation
Cook the pasta according to the instructions on the package (preferably tagliolini). Heat the olive oil in a (wok) pan. Fry the chicken fillet together with the pointed pepper and garlic until done. Add pesto and salt and pepper to taste and stir briefly. Add the pasta and cook for 1 minute.
Enjoy your meal!
Tip: drink 1 to 2 glasses of water 15 minutes before eating, this ensures a full feeling.
