Pasteurization and sterilization
Pasteurization involves heating the milk at a higher temperature for a short period to destroy harmful bacteria. Louis Pasteur invented this. Not all microorganisms are destroyed during pasteurization. The intention is to reduce the number of microorganisms to an acceptable level. Sterilization involves heating to a higher temperature. This greatly changes the taste of the foods. That is the reason that most foods are pasteurized.
What is yogurt?
Yogurt is made from milk and then fermented and soured in a controlled manner. The fermentation of the yoghurt takes place using two types of lactic acid bacteria. These are also called live yoghurt cultures: the round, heat-loving Streptococcus salivarius ssp. thermophilus and the rod-shaped Lactobacillus delbrueckii ssp. bulgaricus. It is not without reason that the last bacterium has the name bulgaricus in its name. Think of the Bulgarian yogurt. The milk is first pasteurized. The milk is then cooled to thirty to forty-five degrees Celsius. Then the good bacteria (the yoghurt culture) are mixed with the heated milk. After that, this mixture must rest for some time, keeping the temperature constant. The bacteria can then convert the milk into yogurt. The milk sugar (lactose) in the milk is turned into lactic acid. This creates yogurt, which is more acidic.
Why is yogurt so good for your health?
The bacteria in yogurt is good for your health. These small organisms provide a balance between organisms in your body. If you prepare the yogurt fresh yourself, it is more likely that a larger amount of these “good bacteria” are present. Yogurt is known for its good effect on digestion.
