The new year is just around the corner and it is time for donuts and apple turnovers. Anyway, how do you make a tasty oliebol or apple turnovers? here some ideas for the most delicious oliebollen and apple turnovers. Another small tip before you get started: the oil should not get hotter than 180 degrees and always try to use sunflower oil when you are baking.
Recipe for oliebollen
- 500 ml of milk
- 500 gr flour
- 1 egg
- 1 bag of dried yeast
- 1 teaspoon of cinnamon
- 1 teaspoon of salt
- 1 teaspoon of sugar
- sunflower oil for frying
- powdered sugar
Stuffing (you could of course omit this, depending on your preference)
- 2 goldreinets, peeled and cubed
- 100 grams of raisins (day before just soak in the rum or a tasty liqueur)
- 50 grams of currants
- 50 grams of sukade pieces
- half a lemon
Make sure the ingredients are at room temperature. Next, mix the flour, sugar, yeast, salt and cinnamon in a large bowl. Then add a beaten egg to the batter and add the milk. Stir the batter nice and smooth. Then squeeze half a lemon over the apple cubes and mix it with the raisins, currants, candied peel and a little bit of flour, then add the filling to the batter and put the batter in a large container and cover well. Now let the batter rise until it has doubled in volume.
Turn on the fryer and wait for the oil to reach 180 degrees. Now you can bake the oliebollen, but make sure you have a drained container with some kitchen paper nearby so that you can put the oliebollen there. It is best to scoop the batter to use an ice tong for this. Then wait two minutes and then turn the bulbs over in the fat. After about 5 minutes you have a few nice oliebollen.
After the oliebollen have been drained, you can add the icing sugar.
Recipe for apple turnovers
- 4 slices of puff pastry (freezer)
- 1 apple
- handful of currants / raisins
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon
- 2 tablespoons of milk
Defrost the puff pastry slices on an oven dish with baking paper underneath. Add the currants and raisins and a bowl of warm water and let them stand for a while. Peel the apple and cut it into small cubes, add the sugar, cinnamon, milk and the currants and raisins and mix well. Put the mixture on the puff pastry and fold it well. Spread a little icy yellow over the puff pastry and sprinkle some sugar over it. Place the baking tray in an oven set to 180 degrees and leave them in it for about 15 to 20 minutes until they have turned a nice golden yellow.
Oliebollen with tender duck meat or chicken meat with curry and basil
- 500 grams of flour
- 10 grams of salt
- 1 egg
- 24 grams of fresh yeast
- 4.5 dl milk
- Dessert spoon of curry
- 200 grams of filling (duck or chicken meat)
- Handful of basil version
- frying fat or frying oil
Make sure you have cooked the duck or chicken meat well. Then cut the meat into small pieces. Place the flour, yeast, milk, egg, salt, curry and basil in a large bowl and make a good batter. Add the pieces of meat and let the batter stand for an hour so that the curry can absorb well. Turn on the deep fryer and make sure that the oil is at a maximum of 180 degrees. Fry the oliebollen for about 2 minutes and then turn the balls over and wait until they are nicely browned.
