Types of coffee
Espresso
A dark, concentrated, small cup of coffee with a light brown, frothy layer. We also know the ‘Americano’. We speak of this when the espresso is diluted with hot water. A ‘Ristretto’ is an extra strong espresso. A ‘Romano’ is an espresso with a lemon peel and a ‘Coretto’ is an espresso with a drop of amaretto, sambuca or grappa. Finally, we still know the espresso macchiato. This is an espresso in a glass with a small layer of warm milk foam.
Caffè freddo
An espresso is cooled by shaking it with ice in a cocktail shaker. Then the coffee is served in a glass. You can also mix the coffee with cold milk and ice. We then speak of a caffè latte freddo.
Granita coffee
Mix a fresh espresso with brown sugar and brandy. Put the mixture in the freezer and stir it every two hours. A kind of crystals are formed. You serve it in a glass with a straw.
Cappuccino
1/3 espresso, 1/3 hot milk and 1/3 milk foam. Pour in the espresso and warm milk and serve the milk foam on top. Officially there is no cocoa on a cappuccino.
Caffè latte
One part espresso to four parts milk. The coffee and milk are poured into a glass at the same time.
Café au lait

Lemon curls
Lemon curls are delicious in the morning with a nice cup of café au lait.
Ingredients
- 200 milliliters of milk
- 1 vanilla pod
- 115 grams of brown sugar
- salt
- 2 tablespoons of dried yeast
- 300 grams of flour
- 50 grams of butter
- 3 egg yolks
- sunflower oil
- 150 grams of sugar
- 100 milliliters of cream
- 2 tablespoons of lemon juice
- finely grated lemon zest
Heat the milk with the vanilla pod to just below boiling point. Mix half of the milk with a tablespoon of brown sugar and a pinch of salt. Stir in the yeast and let it rest for 5-10 minutes. Sieve the flour and mix it with the rest of the sugar. Scrape the seeds from the vanilla pod and mix it with the rest of the milk. Melt the butter and add it too. Make a well in the flour and pour in the yeast mixture and milk. Also add the egg yolks. Mix everything into a wet dough. Knead for another 5-8 minutes until smooth and elastic. Let it rest under a tea towel for another 1 hour and rise. Then you make the icing. You do this by putting the sugar, the cream, the lemon juice and the lemon zest in a bowl and heating it au bain marie. Continue until the sugar has dissolved and is warm. You let the icing cool and cover it with foil. When the dough is ready, knead it a little longer and divide it into twelve pieces. Roll them into sausages. You roll the two ends towards each other and turn around each other. Flatten slightly and let rest for another 15 minutes. Heat the oil to 180 ° C – 190 ° C and fry the curls for 2 minutes on both sides. When you have baked them all, dip them in the icing.
Extra large chocolate chip cookies
These chocolate cookies are delicious in the afternoon and then served with a cappuccino or a caffè latte.
Ingredients

- 225 grams of brown sugar
- 2 large eggs
- 1 teaspoon of vanilla essence
- 275 grams of flour
- 2 tablespoons of cocoa powder

Preheat the oven to 180 ° C. A convection oven at 170 ° C. Stir the sugar into the butter. Then gradually mix in the eggs and vanilla essence. Sift the flour, cocoa powder and a pinch of salt and stir this into the dough made above. Chop the chocolate roughly and add the chocolate pieces as well. Mix well and put it in the fridge for 20 minutes. Grease two or three baking trays with a little butter. Roll out the biscuit dough and divide them into fifteen balls. About the size of a golf ball. Place them far apart on the baking trays. Flatten them with the back of a spoon and bake in the oven for 12-15 minutes.
Galatobourekia
Galatobourekia is a Greek puff pastry pie. It is served in the evening after dinner with a cup of Turkish coffee. Turkish coffee is brewed in a metal pear-shaped pot on the stove, take a teaspoon of powdered coffee and dissolve it in a little water. Optionally, you can add a little sugar. Bring it to a slow boil. When it is done, stir it and let it rest for a few more seconds. A very strong cup of coffee guaranteed.

- 5 tablespoons of brown sugar
- 1 teaspoon of orange blossom water
- 1 egg yolk
- 225 grams of granulated sugar
- 150 milliliters of water
- 2 thin lemon peels
- 200 grams of puff pastry
- 3 tablespoons of oil
You start with the pudding. Mix the milk with the semolina, the brown sugar, the orange blossom water and the egg yolk and heat it in a pan. Keep stirring constantly until it is warm and thick. It should not boil. Pour into a bowl and cool well in the refrigerator. Now you start on the syrup. Mix the granulated sugar, water and lemon zest in a saucepan and heat until the sugar has melted. Cook for 5 minutes until a thick syrup forms. Let cool and do not forget to remove the lemon peel after 30 minutes. Now preheat the oven to 180 ° C. (convection oven at 170 ° C) Cut the puff pastry into 25 strips. Place a teaspoon of pudding on the end of a bar. Now roll up the bar, folding the sides inwards. The pudding is completely wrapped. When you’ve filled them all, drizzle them with oil and fry for 20 minutes. After baking, pour over the syrup and let it cool.
